What type of yeast would likely yield cider that tastes more sweet?

While most ale yeast strains are less attenuative than wine yeast strains, since cider starts with a fairly low OG, most of them would take a cider dry also.

I used S04 last time and the cider stopped at 1.004 at last check. With champagne yeast, it might have been more like .990. Either way, the 1.004 is still pretty darn tart and dry!

Check out the cider forum. You will find a number of ideas there. Everything from using splenda to sweeten the cider to heat pasteurizing the bottles .... I've never been brave enough to try that. Personally I prefer my cider dry; around 1.000/0.998.

WLP775 is probably the best cider yeast around, it retains the apple flavor better than most ale or wine yeasts. Still it ferments dry. If you want sweet cider, you have to back-sweeten.
