What should I make with what I have on hand?

I am not limited to the following, but I do want to use as much of this stuff I can:

1lb Wheat DME
3lb XL DME
0.75lb Special B
3lb honey
3LB brown sugar
0.75lb torrified wheat

Saaz and Goldings hops

I think you need to use all the extract and some (but not most or all) of the honey or brown sugar. Maybe 1 or 1.5 lbs. of either. That will get your OG up, but you can't use so much as to overwhelm the beer.

The Special B might go better with the brown sugar. But I might be inclined to leave it aside and go with a light honey ale with Saaz hops.

Yeast?
 
Is there any software or websites that people know of that can tell you this type of information?

For example Webtender has a section where you tell it what ingredients you have and it will give you a list of drinks you can make. http://www.webtender.com/cgi-bin/imbselect

You can even tell it you are missing a few ingredients and it will tell you what you have to buy.
