I'm looking for a new brew to start sometime around January 13th or so. I'm thinking something wintery, though I'm up for anything. It's a bit early to brew a St. Pattrick's Day beer, but my birthday is in February, so I wouldn't mind brewing something special to treat myself for that. So far, I've brewed a Cinnamon Red Ale (added cinnamon to a Victory Yakima Glory Ale clone), Green Tea Belgian Witbier, a Chai-ed Porter, a light Pilsner style lager (for my friends who want a light beer), a nut brown ale, and a full bodied Pilsner with a Grand Cru on the way.

All of these have been extract or partial mash since I'm brewing all these things in my dorm and there isn't enough space for AG. So feel free to suggest general styles/a specific beer but my recipe options can't include AG.

I have lagering equipment (aka a fridge i've hacked up), I'm not a huge hop head, and I'm open to try something fun/funky. Suggestions?

I like Dunkelweizen in the winter. Its got quite a bit of character and large quantities go down easy. If you use extract its a pretty straightforward style to brew. GL
