Let’s Prost Kolsch from green cheek. I was fortunate enough to meet and talk to Evan the owner / brewer. Pretty cool guy, told him I’ve listen to his beer and brewing podcast and shared my ideas in regards to brewing the best west coast ipas possible. He asked what I thought about his beers and told home mine where better lol.
Celis Juicy NEIPA. Beer buddies said the quad is good so picked up my own since these SOBs couldn't wait a week later for me to be on day shift. And this is what I missed.

Pineapple & Tangerine dry hopped sour (Collective Arts Brewery) with a Jamaican patty and ghost pepper hot sauce. What a treat!
Rocket Queen American IPA at Will County Brewing Company.
Although the Pelican Silverspot IPA is good, I prefer the aroma and hops better in Mother Earth’s Heavy Cloud Hazy IPA. First World problems I guess.
2 more short pours of ESB. Almost done on the chicken!

This place is basically a desert, but we’ve had so much rain lately that things like rain gutters are, suddenly, important. It’s also 85°F today and about 80% humidity which is about 10° warmer and 50 or 60 points higher than what we’re used to.

I hear you. Heat is no joke here. 117F Real Feel. Truly feels like the dog days of our August summer yet a bit early. Supposed to last past July 4th.
Working on different water feature configurations before solidifying. These aren't working for me. Have a good plan for rev C.
Electrolytes and vodka. Think I need a new one...

Curious what you think about Ft Point’s stuff. I was up there a couple months ago and I always try and drink local. Part of the benefit of traveling, and I seriously encourage everybody to do the same.

HB double ipa 9% abv galaxy, galaxy spectrum and Nelson. Got back in town and it’s ready to consume.
HB Belgian dark sour bucket sample been in the fermentor for 3 years. Bit of acetic but solid. Will see in another 18 months.
X2 on the last one & a Hazy Little Thing not pictured.
HB Dubbel and this local Quad. It's okay. There's some fruity esters. I've made much better but nothing in the fermenters to prove it so all I got. For those who don't know, the Violet Crown trail leads from town lake south and will eventually be 30miles long.
Mixed this with the ultra dry NEIPA for some hop presence.
The responsible ThirstyPawsHB would know he has to get up at 4:45am and work 6-12hr days this week. Well "F" that!
