Many years ago I did a black IPA more or less 50/50 simcoe/amarillo that came out quite good. Planning to do an updated version of it this year but the recipe will be more like 3.5:1:1 amarillo:simcoe:mosaic (counting the dry hopping). Recipe is more to use up the amarillo before it gets too old, but it is one of my favorite citrusy hops regardless.

12lb 2 row
1.5lb white wheat
1.5lb flaked oats
.5lb c40
Any clean yeast.

Any clean bittering hop to 35-40 ibu @ 60 (used Galena last time, it was fine)
1.25 Amarillo @ 5
1.25 Citra @ 5
.5 Simcoe @5
1.25 Amarillo Whirlpool for 40 min
1.25 Citra Whirlpool for 40
.5 Simcoe Whirlpool for 40
2.5 Amarillo dry hop 5 days
2.5 Citra dry hop 5 days
1 Simcoe dry hop 5 days.

Very forgiving recipe that really lets the hops shine. I 21 day primary everything, ymmv.

I made the original recipe in 2011 as per my records and have used many hop combos over the years. I always have this on tap as it is a crowd favorite. Until recently I was using Galaxy in place of Amarillo, but it seems people "really" like galaxy lately so none yet this year.

This particular brew session I pulled from 2014.

Amarillo and Citra play well together from the tiniest amounts to fist fulls of dry hops.
