i have 1 pound each fresh amarillo and simcoe hops coming to my LHBS tomorrow for me. 1/2 of each is going to steep in a 10 gallon batch of imperial red that i made last weekend, and the other 8 oz of each is going into a pale "harvest" ale. heres the recipe i have so far

partial mash 10 gallons

10 pounds golden promise
1 pound simpsons crystal 50/60
.5 pound melanoidin
6 pounds gold LME

1.25 oz chinook (11.5% AA) @ 60
5 oz amarillo wet hops @ 15
5 oz Simcoe wet hops @ 15
3 oz amarillo wet hops @ flameout
3 oz Simcoe wet hops @ flameout

yeast on hand : wyeast headwaters ale, wyeast american 1056, wyeast london III, s-05

expected OG: 1.051
expected FG: 1.013

SRM 8
estimated IBU 43

what do you guys think? any tips on using wet hops?

With your hop profile s-05 or 1056 would work well. IMHO, London III shines on recipes emphasizing malt character. I have never used headwaters. Heard it takes awhile to clear.

and done!
