I'm generally not a huge fan of pale ales, but I had this on tap and it was outstanding. There's not much on Victory's site other than they use German malts, and lots of Citra...but a blog on their site said it wasn't a single hop brew. It has some nice body, not too bitter, but very flavorful and tasty and VERY notable hop flavor.

Any thoughts on the below recipe? I'm going to try is and see if I can get close, but thought I would look for some critique...

I'm sure you've done this by now, but just for the hell of it (I love Headwaters PA):

I brewed a Citra APA trying to come close as one of my first batches. However, it was an extract batch a few months ago. I'd say your grain bill looks good, maybe even sub some more Munich/Vienna for the 2row - Victory uses a lot of German malts. I used 6.5# Golden Light DME and 0.5# each of C-20/C-40 steeped. Here was the hop schedule I used:

0.5 oz Centennial - 60mins
0.25 oz Centennial - 15mins
1 oz Centennial - 5mins
1 oz Citra - 5mins
0.25 oz Centennial - 1min
1 oz Citra -1 min
1 0z Citra - dry hop 7days

This was for 6gallon batch.

OG - 1.052
FG - 1.012
5.1%ABV
49 IBU
7.4 SRM
WY1056 w/o starter

I did side-by-side even though I wasn't *really* trying to clone it. They tasted pretty close, but the Headwaters had noticeably more aroma. How'd yours turn out? I'm brewing BIAB now and haven't brewed this one like that.

Combining the two recipes that were posted I'm looking at this:

Notes:

I find the honey malt interesting, never thought of using that. I'm wondering if I'm missing something in the grains, maybe a tad of victory. I taste roastyness when I drink headwater. Maybe cut out the honey and drop down the munich and add the victory to under 10%? I like the roast, do not taste biscuit.

I also have a feeling this might be too citrusy.

Dunno....

EDIT: ignore my crystal 40+20=60 nonsense.

I'm really tempted to try that just because that grain bill looks like nothing I have used before.

I'm drinking a headwater now trying to focus on the malt profile and I see your pilsener and I'm like..."wow it does have the same backbone as Prima Pils". Its like prima pills with toastiness (that is not a word?!).

On the victory website, it does say "German Malts" plural like there is more than one german malt in this thing. Thus Pilsener and Munich Malts
