I've got a few buckets fermenting right now, and they're going much slower than I expect they should. The Apfelwein is the strangest...I used Nottingham and two pounds of brown sugar instead of corn sugar. "Brewed" that four weeks ago, and the airlock still bubbles once every 5-8 seconds. Gravity this morning was 1.014.
It's been a little chilly here, and at night it might have dipped below 60 once or twice. I know the cold will slow it down, but since it hasn't stalled at all (I've seen it bubble every day before work) I would've expected it to be done by now. I tasted the hydrometer sample today and it was great, no off flavors at all. RDWHAHB?
