5 gallon fermenting vessel

15 lbs of Kirkland Honey
Dynamic Health 100% Pure Organic Certified Tart Cherry Juice Concentrate, 16-Ounce
19% alcohol tolerance white labs champagne yeast

I do not boil honey use Poland spring water.

Aged: Brewed in 2012, it's new year of 2015 now (about 8 liters left now)

It came out dry with tart aftertaste (it really tastes like a bitter kiss)


I am so brewing more mead now and making this again only with 10 lbs of honey and less fancy yeast. :mug:
 
I have a 1 gallon red raspberry in primary right now made with 36 oz of Wyman's fresh frozen raspberries 3.5 lbs sourwood honey and D47 that I think is also going to be very dry and tart. But I do plan to add another 12 oz of berries to the secondary on about new years. Same water you used.
