I wanted to add some fruit (raspberries or cherries) to an Imperial Stout I have in the fermenter and I was wondering if anyone had an opinion on adding Campden tablets to the beer to help prevent infection and further fermentation of the sugars from the raspberries?

Also, I was thinking if I add raspberries that I would add 1 pound per gallon and if cherries it would be 3 pounds per gallon. Thoughts?

I would soak them in a little vodka then add after fermentation. That will prevent an infection and help release the flavor. There's 5 grams or so of sugar per cup of raspberries, 12g in cherries. I think your amounts are good, but maybe a little less cherries if they're fresh.
