Interesting...looks like wine as a top-off for kits isn't really necessary, just plain old water.

Also, the racking issue discussed at the end is also an eye opener for me!


Same idea I had making cider and wine from store bought concentrate. I use enough concentrate to make six gallons but start with less water in the primary and add water to get gallons or near to it in the secondary.
 
Ok, question... When topping off with water do you boil and cool the water or just straight from the tap? I have 2 I need to top off here in the next few weeks.
