Ingredients:

1 lbs 8.0 oz Vienna Malt (3.5 SRM) Grain 2 27.3 %
1 lbs Pale Wheat (Dingemans) (1.6 SRM) Grain 3 18.2 %
0.25 oz Mosaic [11.70 %] - Boil 15.0 min Hop 4 12.4 IBUs
0.25 oz Mosaic [11.70 %] - Boil 5.0 min Hop 5 5.0 IBUs
0.25 oz Mosaic [11.70 %] - Boil 1.0 min Hop 6 1.1 IBUs
1.0 pkg French Saison (Wyeast Labs #3711)

Mash Temp= 150

Going for a nice easy drinking beer that doesn't kill it on the OG or IBU. Also not looking for the hops to overpower the saison esters.
 
I think you could still up the hops if you wanted them to be a bit noticeable. I routinely do a schedule like this for hoppy saisons and end up with a good balance. 5.5gal batch
@60min - tiny bittering addition
@15min - 1oz
@0min - 3oz followed by a short hopstand

+25% vienna may be a bit overdoing it. I stopped using vienna or munich in my saisons when I had a few that came out with a muted yeast profile. People still liked them, but I didn't drink much of them
 
If you want to go full New World, use an American Pilsner malt. They don't usually have the character that the European malts have, but they'll still make a solid beer.
