I brewed a Vienna lager three weeks ago and I'm barely over 50% attenuation (1.054 down to 1.024). It's still fermenting and I'm not in a hurry so I'll keep riding this lager train.

I'm a person who saves yeast from a starter and revives it within three months. Sometimes less but never more. I rotate between three strains and brew once or twice a month.

Something went wrong between this batch and the previous. WLP940 has never taken this long to ferment out. Either it mutated or my viability went drastically down the crapper because of swinging fridge temps.

Time to throw out my saved yeast and start fresh and buy a new vial while patiently waiting for this Vienna to finish. WLP833; you're up and will be my new house lager strain until I eff you up too.
