I recently started taping the Ranco temperature probe to the side of my plastic bucket fermenter to get the temperature instead of measuring the air temperature and comparing it to a thermometer on the bucket.

It seems to be much more accurate, however, I'm wondering what kind of temperature differential I should set in the Ranco. I have it set at 2 degrees now. If I set it at 1 degree, to keep the fermenter more stable, will I burn out the compressor in the chest freezer more quickly?

I suspect the "burn out the compressor" idea will never die. A compressor is only damaged if it is shut off and immediately re-started. Even a delta of 1F won't cause that.
