Temp Controller Advice

Howdy,
I'm turning my small (ca. 7 cu. ft) deep freezer into a fermentation chamber with an STC 1000. The freezer says it draws 3 amps. I don't know much about electricity but I've read that freezers can draw much more than their rated amperage at startup. Should I wire up a relay to protect the temp controller?
I have 40 amp relay (Fotek SSR-40 DA), but I'm wondering if it is necessary with such a small freezer. I can figure out how to wire the controller from advice on the internet, but the relay sort of complicates things.

I'm intending on using a small light bulb in a coffee can for heating. Any advice on wattage? Should that be on a relay too?
 
I've got an STC-1000 on my refer and I've used a 25amp Crydom SSR with a 120V input just to save the contacts.

The relay with work fine for a small light up to 600 watts (resistive load)
 
I've got my 7 CuFt Chest Freezer running directly off of the STC-1000. The controller warms up a bit when cooling, but even at lager temperatures in my warm Tacoma WA garage the compressor doesn't run that long.

I've only been running it a few weeks though, I can't speak to the long term reliability. The unit is rated to 10 amps so I'm giving them the benefit of the doubt and if I end up frying a $15 controller in a year I won't be too sad.
