Technical Specifics?????

Hey there...new to the site...enjoy reading everyones posts. I have been making wine now for about 7 yrs. I know the basics...but want to get more serious about all the ins and outs of wine making and why it turns into wine. I have a hydrometer for testing the SG...but now I am seeing alot o people on here talking about other things they are testing and looking at....what is it all for??? how do you know where it should be??? Is there charts or books to follow. What about acid testing???? Had someone ask me about the acid levels...didnt know what they were talking about. What can anyone suggest for me to get more familar to these chemical technical details.....Thanks in advanced.
