Hello all and happy holidays.

A question about taste testing...

I was thinking about getting a couple flip top bottles and popping one open throughout the bottle aging process to check progress.

Does this kill the beer in the bottle by oxygenating or does it kill the carbonation? Or any other adverse effects that make it a dumb idea?

It will negatively effect carbonation, and increases the odds of getting an infection in the test bottle. If you're just looking to moniter carbonation progress, fill a couple of pop bottles. When there is no longer any give when you squeeze the plastic, your batch should be pretty well carbed.
