Anyone ever done burnt honey? What's the reasoning behind it and are there some guidelines?
 
I have. Look up brochet mead. It provides a great roasty/burnt flavor to stouts. Also, has fig and dark stone fruit flavors. It is very hard to do and takes a long time. It will boil over very easily. Good luck if you try it.
