I am going for a 100% corn mash with amylase... Please comment on my numbers... 5 gal. Wash 20 lb fresh cut sweet corn juiced heat to 170 for 30 mins cool to 150 add 2tsp amylase cover airlock cool natural to 75 pitch in the yeast

I'd say used flaked maize as an adjunct with some 6-row. I don't know if that's alpha-amylase or beta-amylase. I'd thought about buying some sweet corn from someone selling at a stand, then mashing with base grain.

If you really want a 100% corn mash, try looking around for maize malt. There is such a thing. If your local homebrew supply doesn't sell it, go google for it.

Thanks for the comments and advice, all my sweet corn is free so thats why I am trying a couple of batches,i will look for that maize malt...great idea for a total 100% corn mash
