Suggestions for a kitchen sink beer?

Want to use up ingredients... I have approximately:

1 lb Belgian Caravienne
8 oz Belgian Caramunich
4 oz Special B
6 oz Crystal 120
6 oz Chocolate malt
8 oz Victory malt

Also have TONS of Cascade leafs, some Cascade pellets, 1 oz Mt. Hood pellets, a bunch of Nugget leafs and about 2 oz od Centennial leafs.

I have a packet each of S-04 and S-05 and also a vial of WLP530 Abbey yeast.

I hope that all I have to do is hit the brewstore for a base malt Wednesday @ noon and get to brewing on Sunday!

Suggestions?
 
I say tone down the chocolate malt a little, add the base grains and let it fly. Use whatever hops you have in small quantities that need used up.
 
Note: That is by no means a recipe that I listed... That's just what I have to choose from... So feel free to formulate with a little bit o'this, little bit o'that.
 
The first thing I thought of when I saw those ingredients was an american-belgian fusion type beer. Hey, the fusion stuff is all the rage in food, why not in beer.

So for this beer, think belgian dark strong meets american IPA. A powerful malty background full of complex caramel flavors and dark fruit, but with a strong bitterness you might not have expected, accompanied by huge floral and citrus hop flavor and aroma. The flavorful and spicy yeast brings everything together for a unique, but completely satisfying brew.

The recipe:

OG ~1.080
IBU 50-60

8 oz. caramunich
4 oz. special B
6 oz. chocolate malt
a pound or so of homemade dark candi syrup
belgian pale and pilsner in equal proportions to get to OG

hop profusely with the cascade, nugget and centennial

mash low, like 148 for 90 minutes

ferment with the abbey yeast.

That's what I would do anyway!:D
 
I like KingBrianI's suggestion.. but I would probably back down the base malt quite a bit and aim for an OG of about 1.040 and hop it like an APA/IPA... So, Enkel meets APA/IPA?

That is just me... I am cheap and wouldn't like to use a lot of base grain on something that has yet to be proven.

Regardless of what you do, we need pics and feedback!

Belgian Pale Ale? Along the lines of your Especially Bitter, but with the Abbey strain:

8 lbs 2-row
0.5 lb Victory
0.5 lb CaraVienne
0.25 lb CaraMunich

OG ~1.051

FWH with an ounce or so of Cascades, ~25 IBU.

Ferment with WLP530. Start at ~60-65F and allow it to get as warm as it likes. Rack and dry-hop with another ounce of Cascades or with Mt Hood for a week before fining.

Package targeting 3 volumes. Age for at least a month.

Now I'm thirsty... :D

I think so.... I use huge bags... 10-12 inches long so there's plenty of room for the leafs to float around and for the pellets to expand. Granted, a lot of pellet gunk escapes, but it helps. It's best for leafs.
