You can; it's just a pain in the ass to handle LME when it comes to measuring and transferring it.
 
I make my Hefe starters with some old wheat LME I have. No biggie. Just remember to multiply the amount of DME you would use by 1.25 to get the amount of LME you need. You need to account for the water in the LME.

1.25 to 10 ratio ===== LME same as

1 to 10 ratio ========DME As in the 2nd paragraph of starters and stir plates.
