The first one, but the s should be pronounced with a 'sh' instead;

The German 'ei' is always 'eye', and 'ie' is always 'ee'. Additionally, 'ä' (or 'ae') is a long A (but it's closer to 'oi' in 'äu/aeu' like 'Kräusen'); 'ö' (or 'oe') has no English equivalent, but it's kind've like a mix between 'oo' from book, 'oo' from moon, and with a little bit of an 'r' for good measure; and 'ü' (or 'ue' - in 'Trüb') is similar to 'ö' but leans more heavily to the 'oo' from moon.
And yeah, the initial 's' is usually more like 'sh' if it's followed by a consonant, and it's more like 'z' if it is followed by a vowel, or at least that's how I was taught. It's possible that's based on a certain accent or dialect, though.
