I like sweet meads, but don't like the high alcohol.
I like low alcohol meads, but don't like the dryness.

Today I'm starting a mead which should end at 5.8%ABV and a final gravity of 1.02.
2 liter batch:
10oz clover honey
3oz honey malt
6oz Carafoam malt
Will cold steep the malt in 2 liters if water for 24 hours. Then strain off the liquid, rinse the grain with one liter hot water, and bring the total to a boil. Boil for 15 minutes and remove from heat. Add the honey when temperature drops below 100.
Ferment with English ale yeast.
