I have been reading about small drinks that have a very small fermentation time so that very little alcohol is formed.

I want to make some "mead" this way. No alcohol for me, if i can help it. Not going down that road again haha.

Whats the best way to accomplish this?

I do have a soda stream if the only option is "mead" soda hahaha

It sounds like your goal is to make something closer to a soda than an alcoholic beverage. If I'm reading it correctly I think the soda stream is an easy way to accomplish your goal.
 
yeah, probably so. i know back in the day, they used to make small drinks which were about 1% alcohol, from the fermintation. A mead soda sounds decent, maybe even use yeast to carb it up haha.

but for now, ill use my soda stream. Is it just honey and water to make a base?
