Looking to build a kettle for 3gal batches and I have two questions.

What size kettle should I go with - 24 qt (6 gal) or 36 qt (9 gal)?

I figure that a 9 gal will allow me the do higher gravity with eBIAB.

Also, 1650w vs. 2000w - doesn't look like there's a terrible difference in heating times, yet both require the same amp breaker. Primary difference is low density vs. high density - any concern there? Thanks!

I would go with the 9 gallon and the low watt density element. Ultra low watt density would be best.

Same as above. The 9 gallon pot would also allow for larger batches in the future.
