I am going to make a mosiac pale ale this weekend and I am looking for some feed back, I am a little concerned about using 100% mosiac hops. Should I use a cascade or a citra as the bittering hops? From what I have read this should have a fruity aroma and flavor. This is going to be a 5.5 gallon recipe

1. 10 lbs. Pale malt (2 row) US
2. 2 lbs. vienna malt
3. .8 lb. caramel/crystal 20L
4. .8 lb. caramel/crystal 40L
5. 1 oz mosiac @ 60 minutes
6. .5 oz. mosiac @ 10 minutes
7 .5 oz mosiac @ 5 minute
8. 1 oz. mosiac @ flame out
9. Yeast Wyeast 1056

Depends on what you're going for, but I wouldn't worry about it. I did a SMaSH IPA around summer time that was just 13lbs pilsner malt and about a half pound of mosaic, mostly in later additions with a 3 oz dry hop and it turned out stellar. Your grain bill should yield enough subtle complexity that the single hop shouldn't be an issue IMO. I also wouldn't say there's anything wrong with the other hops you mentioned, but go for all mosaic; why not, its a great hop.

Mosaic is awesome. Id say do this one with all mosaic and then adjust later if you think it needs some other hop characterstic. No way to know unless you brew it up!

Here is a recipe I've made a few times that is really good. Call it a Session IPA but it's probably more of a hoppy pale ale in reality.

I'm planning a very similar brew for tomorrow as the original post (same hop schedule) but with a 50/50 mix of 2 Row and Marris Otter, 8oz crystal 20, and 4oz carapils because I like my pales ales pretty light in color (about 5 SRM.) After reading another thread, I picked up some columbus for bittering. I'm also planning on dry hopping with the mosaic. At about 6% and 50 IBUs, my recipe is probably more of an IPA, but I was inspired by Pipeworks Lizard King Pale Ale. I'm planning on mashing around 148 to keep it on the thinner/dryer side. What's your plan?

I just finished a keg of the same beer that used all citra and it was really good. Looking forward to showcasing the mosaic on this one.

I brewed an all Mosaic/Maris Otter SMaSH 2 months ago with S-04 and I must say that it is very very much on the side of tropical fruits.

This hops is so intriguing and complex when you smell it, that I needed to know what it tasted in a SMaSH.

Mango and papaya are 75% of the flavor in my beer. A little bubble gum and anana?? but not that many. So many other tropical fruit can be tasted.

I really don't get the blueberry taste at all (like many).

I hopped that the flavor was more Citrus than that but the tropical fruity side is overwhelming everything. This is a tropical fruit party on steroid.

I think this is a good hops to get mixed with Simcoe/Citra/Galaxy for IPA, IIPA, NEIPA.

Overall it is a pretty good beer and this hops will always be in my IPA at flameout forever I think

7gal boil @ 90 min
0.75oz @ FWH
3oz @ flame out
3oz @ chilled to 170F - 20 min whirlpool
4.5oz @ Dry hop

FG 1.010
ABV 6,1%

Cheers

I'm drinking an all Mosaic/Vienna SMASH now. I think I'm having an issue in my brew process lately so take it for what its worth but this was my first Smash and it tastes boring and thin to me, Granted your not doing a smash but the Mosaic is not popping out and nice and juicy.
10 gallon
21# Vienna
1.5 0z FWH
3 oz flameout
3 oz at 145 deg
3 oz dryhop
