I was planning to brew last weekend, but it didn't happen, and I forgot to put my vial of yeast back in the fridge. It's now been sitting at room temp for about 7 days. It's still factory sealed, think it's okay to use?

If it was sealed and sitting around the 70F mark, I'd imagine you could make a 1/2L - 1L starter with some dme/lme, let it sit a day or two and you'll be fine. If you don't have a stir plate, shake it to keep them suspended/aerated a couple times a day. It may also behoove you to pick up some yeast nutrient, but it's not crucial.
