AHS has a relatively inexpensive Belgian Saison kit that I would like to have while my tripel ages out for a while longer. They suggest using WLP560 with this kit, but my LHS only has WLP565, 566 and 568. Can I use the 568 or either of the other 2 instead and get good results?

I would also like to have this on tap in 3-4 weeks when my current beer on tap is gone. I know it is probably best to age it, but would it still be good enough to serve the purpose of having an inexpensive beer to keep me from buying the commercial stuff while my more expensive tripel ages?

This particular AHS kit isn't really that huge of a beer. OG should be 1.057 according to their website.
