So, I've brewed both a Saison and Golden ale that both used saison yeasts and had that saison spice to them. I have another Saison kit I bought on sale, but don't want to brew another one.

What would be some good yeasts to try with the ingredients? I also don't mind adding extra ingredients to make it unique.

Any and all funky and creative ideas are welcome.

Drop the spice, ferment with a clean, American Ale yeast, and call it a blonde.

Since Saisons get most of their flavor from the yeast, just pick a different yeast.

A Kolsch yeast might be a good choice.
