Decided not to put it in my club’s 55g sour barrel just in case. I have wlp672 to add. Make a starter? S-04, OG 1.079, FG 1.032. Strike was too hot is what we’re thinking. 160 gallon batch. OG was supposed to be 1.082 and reports are 1.033-1.028. So something happened to the fermentables.

Maybe treat with campden and pitch with a starter with wlp672? Is what I’m thinking...

Ideas? First infection was meant to be a sour! Oh the irony!

Sorry, I'm a little lost. Can you explain step by step what's going on and then what questions you have?

Do not add Campden.
