I've got a hefe done fermenting and I want to make another one right behind it. Are there any drawbacks to my simply pouring the wort on the old yeast cake after kegging?

In some very old threads I read that it may be over-pitching. Do I really need to worry about that?

I'm going to try my hand at yeast washing for a different beer/yeast this weekend, but I thought for this hefe it would be convenient just to pitch on the cake. Any tips or concerns?

It's definitely overpitching. You want some yeast growth, especially in a hefeweizen, to get some ester production. Just rinse the yeast and pitch the proper amount of slurry, or make an appropriate-size starter. Oh, and be patient for the weizen yeast to drop....
