how long do you think you can save an un-washed sour yeast cake in the fridge, before using again? i've had one sitting for almost 6 months, just dont know if i can reuse this, or if i should pitch a new sach, and then add some fresh dregs to secondary instead.

thanks!!

I used a 7 month old unwashed sour cake. It isn't moving forward as quickly as the half I hit with dregs. I pitched fresh sacch and added some saved slurry in secondary (no starter). If I were to do it again, I'd make a starter out of it and add it in primary. Hitting with some fresh dregs certainly won't hurt your beer and will likely help things get going a little quicker.

I asked a similar question over in the wild brewing section, the answer is you can keep for quite a long time some even said years. Would definitely need new sacc after years I'd say but these are hearty bugs so I'd say your good.

Ok thanks guys! I'll give it a whirl, and worst case I'll toss in some fresh sacch, then fresh dregs in secondary!
