So last night my wife goes to a retirement party for one of the girls on her golf league. She comes home pretty well lit. She starts telling me about the party and what they were drinking, which is usually wine or rum drinks. Then she says "Oh I drank a brazilian beer, and it was really good. She doesnt usually drink beer, so I start to quiz her, to find out what it was. She says it started with a "C" and was call "chimney" and it was strong.

Im like "do you mean Chimay", and she's like Yeah thats it. I tell her its a belgian and she says "isnt that what I said.

Ive been wanting to make a belgian, so I think this might be next in line.

I didnt even know about the place she went, they have a nice selection of bottles and taps. Even a lambic on tap.

I didnt ask her, but I have allready found a few. After looking at the beers they have there, we are going back next week. Although she might not remember.

...yeah, I've had that dream too. I keep hoping my wife will come home one day saying she liked that "chimney" beer...

congrats man, and get to brewing! Wonder which Chimay she had... all 3 are great.
 
lucky man! although that means less for you once you brew it but we all know sharing is more fun that hoarding it and drinking it all yourself.
 
When she said she like it, I seemed surprised, and she said well I liked it after a couple glasses of wine. I guess well see if she likes it sober. It was funny to see her like that, she doesnt drink very often.
 
She said it was the Blue. Any one made a clone of this, I have seen some recipes online, but I would feel better about brewing it if someone on here gave it their blessing.

Made this one. dead on color, but the taste was just a bit off, I'm guessing ferm temps. Still a great beer though.

My SWMBO really like Chimay too. The above recipe is a real winner, I've tried it too. I'm even trying an all grain version I modified a bit for the second batch, which has a little less alc-y-hol.

Use this recipe to make some nice dark candy sugar with some table sugar at home. I didn't use the DAP but just lemon juice and it came out fine..
