Hi,
I want to make wheat ale with quinces fruit, thinking to use one quince per gallon (or so). But I have few questions:
1. Do I have use WLP001, making this beer wheat beer or can I can keep using my old recipe wittBier using WLP400? Would the Belgian character of the yeast over shadow the quince flavor?
2. Do I add the quinces at flame out, or during the secondary fermentation?
