Do any of you have any recommendations for gluten free brews that reliably ferment quickly (like, less than a week) with dry yeast? I know I'm not likely to get the best beer possible with that short a fermentation time, but I want to at least make sure I'm at FG and not at risk of bottle bombs.
Basically, I'm interested in making something appropriate for Passover, but I haven't given myself enough time.
