Question about missing OG....

Greetings,

I hate to ask this question, but my OCD won't let go. This is my first
stout and my first attempt at a high gravity beer.

I brewed this recipe, stepping it up from 3 to 5 gallons:

I completely missed my OG (which is expected to be 1.093) and got a 1.076!
I did a single infusion mash and I know I overshot my water amounts as I was
left around 6 gallons of wort after a 90 minute boil (colder, clear day, but
a little humid and I could account for that in my boil off). I have been
pretty good about temp corrections for my hydrometer, but I took a second
reading and got the same thing again.

I pitched in a third generation WYEAST 1056 starter and got a pretty good
fermentation for about four days before it tapered off. Constant temps
between 64 and 68 degrees in a glass fermenter.

However, after just over 3 weeks in the primary, I took a sample and it is
reading 1.022 (as expected from the recipe).

Should I expect a lower FG b/c of my lower OG? Should I consider adding
some more yeast, or just proceed with the plan of racking to the secondary
for a few more months?

if I did the calculation right, your 6 gallons at 1.076 could have been boiled down to 5 gallons at 1.091. That's pretty close to what you expected. Your FG is in line with what you expected and the calculations for yeast attenuation are just calculations. You might be able to bring that FG down a bit by swirling the yeast back into suspension and letting the beer get a little warmer, dependiing on what temperature you fermented at. In any case I would leave it for another week before racking to secondary just in case the yeast are being slow to finish.

I am sorry that left out the small detail that the 6 gallons was post boil volume! I will see about giving the carboy a little rock and get some of the yeast up off the bottom.
