Question about making a fermentation cooler

I've got an old mini fridge and just ordered an STC 1000. I've looked up mtie DIY videos on how to put it together but there is one thing that was always left out.

What do I do with the original temp controller? Do I leave it in and just have it at a certain setting? Or do I remove it?

Turn it to its coldest setting. The STC-1000 will regulate the temp by turning the power on and off.

Turn it to maximum and plug it into the controller. You probably don't want to be mucking in the guts of the mini-fridge.
