It's time for me to brew a pumpkin beer. I'm looking through my log book for the supplies I need. I brewed both of these last year and both were almost great. All other things being equal, does anyone have any suggestions for the following grain bills?

TIA

5 gal. grain bill 1:
---------------------
8 lb 2-row
1/2 lb cara munich
1/2 lb crystal 60
1.5 lb vienaa

5 gal grain bill 2:
--------------------
8 lb 2-row
1/2 lb biscuit
1 lb crystal 60
1/4 lb flaked wheat

Common:
--------------------
  • mash ~155 for ~60 minutes
  • 45-60oz of Libby's pureed pumpkin in mash w/2lbs of rice hulls
  • 4 AAUs of Goldings, or maybe a more citrsuey hop. Im open to suggestions here.
  • typical Pumpkin spice added at end of boil
  • US05 yeast
  • no dry hopping/spicing

For pumpkin beers I've had the best luck with adding spice tea close to bottling. It gives a cleaner/fresher flavor than late boil additions (which I like for Belgian type spice character). You can also try adding the pumpkin to the end of the boil, I get more flavor that way (pumpkin really doesn't have much starch to worry about).

Otherwise looks like some solid recipes, good luck!
