If this is the wrong forum please advise where I should post it or a moderator can move.

I have some apricots that I harvested yesterday that have probably had fruit flies visit here and there. I am planning on slicing, pitting and then blanching them for 10 minutes. They will then be pureed and have campden tablets added and then frozen.

Would this be enough to help destroy any acetobacter that would mess up an otherwise good batch of fermentables or am I playing with fire?

Thanks,

Yeah. You'll be fine. It's probably a bit overkill actually. I usually just throw whole (or chopped) frozen fruit.
