Potential to use current wiring or start fresh?

I found my dream control panel box. Can anyone tell me if I can use some or all of this wiring setup or if I should start fresh? Thx.

Looks like a nice score. Whether you can use what is there depends on what you're planning to do. Looks like it has four DPDT relays probably wired up to the terminal blocks. If you loads fall within the relay ratings it seems like you would be able to use them.

If switching only 120V loads, I have seen panels where people wire the two relay contacts in parallel to switch the hot, I guess either for reliability or possibly to try to increase the current handling capability, but I don't suggest it for increasing the current handling capability for a couple reasons.
