Anyone ever use this stuff? Long story short, I am racking my saison onto some raspberry puree, and I really want the flavor of the raspberries to shine without it fermenting out. Suggestions?
 
Potassium sorbate stops yeast activity, so if the raspberry puree is a commerical variety, you probably shouldn't need potassium sorbate. It does nothing to enhance or preserve flavor (as far as I know.) If the puree is not commercial, then there could be some wild yeast or other undesireables in there, so I would crush up 1/2 a tablet, stir it in and let it sit for 12 hrs covered (and in a sanitized container). Then add to the secondary container and rack.
