A batch size 5 gal.
1 gal of honey to get 10-12% using 18% alcohol tolerance yeast.
10 Pomegrnates whole
organic juice consecrate to make 2.5 gal of juice (normal consistency.)
in looking for discussions online I figured It's hard to make a bad mead
This time I am thinking, I am going to ferment the honey (8 days) then add all the pomegranates 8 days - 1 month. Bottle/age after that.
Pomegranate seeds, freeze ? use brew bag -use a press to crush most, add after 8 days.
organic pomegranate concentrate from Dynamic Health, add at pitching or after honey fermented ?
The 15% mead that I just moved to carboy has no heat at all. I don't expect that it will need to be aged for long. just enouph to clear it up...?
