Belgian Cherry Tart

Just purchased 10lbs of fresh sour cherries for the secondary. Stems removed, cleaned and frozen. What's your opinion about pitting the cherries before adding to the secondary? Yes? No? Also, would you spray the cherries with starsan or steep in vodka?

If they're frozen you should be good to go. I'd just mash/crack them a little and leave the pits in! There's a video on youtube where John Kimmich from the Alchemist here in Vermont talks about their Petit Mutant beer and the flavors that are extracted from the cherry pits over the 6 months the beer sits on cherries. Just a thought!
