Hi gang, looking to make my first Mexican-style lager from ingredients on hand. I have a 3 gallon keg available, so looking to make a smaller batch. These are things I have on hand and want to limit the recipe to what’s available here at my house. Again, not using all of these, but I have any combo of these on hand:
grains available:
Two row pale malt
Pale Ale malt
Various home-toasted malts anywhere from 3° to 20° lovibond
Homemade crystal-60-ish malt
Up to 1 lb. corn “quick” grits
Up to 1 lb. “quick” rolled oats
hops available:
Czech Saaz
Tettnang
EKG
Cascade
Centennial
Cashmere
yeasts available:
US-05 safale
S-04 safale
W-34/70 saflager
I’d really like to hear some opinions based on what I have. Thanks everyone!
