I built a collar and a lid the interior of it is unfinished is it recommended to paint or stain this with an exterior grade to prevent it from moisture inside the keezer? Thanks

Finishing the inside of the collar wouldn't hurt. Wood never stops moving, across the grain, in response to changes in temp and humidity.

A keezer isn't really an heirloom piece, intended to passed down through the generations, but sealing both sides of the collar isn't a bad idea.
