OK, I've made about 40 batches of various whatevers now, and just for fun, I wanted to do a sugar stepped addition with Premiere Cuvee Yeast, and see how high of ABV I could get.

The packet and all sources say 18% max tolerance, but, according to my calculations, I'm at 20%+. I had a strong fermentation from 1.135 to 0.986 (estimated, as my hydrometer only goes to 0.990).

What's up here? It seems like there is even enough power to ferment more, if I added more sugar (I just might!). Check my math. What's the deal here?

And yes, by the way, it tastes terrible. But just a fun 1 gallon batch!
