I bought a kit about 10 months ago with a fresh white labs yeast that has been in the fridge since then. Now that I'm stuck inside because of a blizzard, I figured it would be good time to make it. I took the yeast out of the fridge and noticed it says, "best if used before Aug. 28, 2012"

I'm sure the malt, which is canned liquid and dry powder, is still good (tell me if I'm wrong) but do you think I can use the yeast?

Make a starter, be patient with it. It'll come around. I'm using 10 month old 3rd generation washed yeast in a mild and it seems to have done a pretty nice job. Good luck! And enjoy the pretty views out your window. ;)
