So i made starter that i never got round to using. I put a cap on it and left it in the fridge and i guess 8 weeks may have passed in the mean time. I'm looking to do that brew now and was wondering could i build another starer off that yeast cake.

Anybody aware of potential downsides here?

I've saved bits of the yeast cakes in some of the starter wort from ones I've made and stored them in the fridge with good results. You'll likely need to do a stepped starter after decanting the old wort off of the cake. There's a good how-to video/article from BillyBrew here with the particulars of going about it. A dollar's worth extract isn't too much risk to see if it's still viable.
