Never made an oatmeal stout before - just looking for some comments.
Well, the base is good, but if you want it to taste anything like a stout, you've got to add some roasted barley or black barley. Chocolate malt has a hint of roast, but you've got basically a brown ale recipe there. That will still be good, as I love brown ales, but a stout has roasted barley. I have an oatmeal stout without roasted barley, but I use black barley instead. In order to have a stout, you've got to have either one of those grains.
Here's my oatmeal stout (which is more "coffee" flavored than a "roasty flavor", if that makes sense):
7 lbs Pale Malt, Maris Otter (3.0 SRM) Grain 63.64 %
1 lbs Oats, Flaked (1.0 SRM) Grain 9.09 %
12.0 oz Victory Malt (25.0 SRM) Grain 6.82 %
