I'm heading to the LBHS tomorrow for supplies. Any quick suggestions are appreciated. This is my Christmas beer.

5 gal

1.061 OG
1.018 FG
5.7% ABV
31 IBU

8.5 lb Maris Otter
1.25 lb Flaked Oats
.75 lb Amber
.75 Crystal 80
.5 lb Roaster Barley
.25 Carafa Special III
.25 Chocolate

2 oz Fuggles at 60

Mash at 156 for 60. Ferment at 65 until FG. Keg and force carbonate.

I personally would drop the mash temp a couple degrees. You don't need it that high with all those flaked oats.
 
Personally I would up the oats a little bit. At least to 1.5 pounds to really start getting that nice smooth creamy mouthfeel.

Yeast: S-04
Batch Size (Gallons): 5.5
Original Gravity: 1.056
Final Gravity: 1.015
IBU: 26.1
Boiling Time (Minutes): 60
Color: 38.6 SRM
Primary Fermentation : 2 Weeks at 68 Degrees

Grain Bill
-8.75 # Maris Otter
-1.5 # Flaked Oats
-1 # Chocolate Malt
-8 oz. Crystal 120L
-8 oz. Roasted Barley

Hop Schedule
-1.5 oz. EKG (60 min)
-.5 oz. EKG (5 min)

Single Infusion Mash at 156 for 60 minutes

That's the recipe I use for my oatmeal stout. Not saying it is the best, but I've had really positive reviews on it. Just sharing what has worked for me. I hope yours turns out great. :mug:
